Shadow warrior 2 would likely fit the bill, spreadsheet inventory management with a rogue game attached.
There's those old Romancing/Three Kingdoms period games where you have to manage your rice and other fun things.

And from the matter of similar things, I recall such a logistics heavy game that heavily featured Rome.

It's a puzzle game with simple rules that combine in quite a complex system.
But considering mathematics, it is basically just combinatorics. Pick a right move in a right order.
I don't know what genre Professor Layton is, but it sound like you might enjoy it.
Simulations and 4x come to mind, along with strategy sims which are a sub genre of simulations usually coupled with rpg mechanics.
In case it's not obvious: Slay the Spire (and to a lesser degree, other deck builders).
