I think I know the answer to this but I just want to confirm it.

If I download a game on my GOG library using the download/installer links (not GOG Galaxy) does that game remain that version after a developer updates the game? I suspect yes, but I want to make sure.

Also, is it possible to have multiple installations of a game, for example, of different version numbers of a game, using this system?

Yes, it will not auto-update. Good for mods.
However, some games have internal update method, and if you use GOG Galaxy, do not forget to turn off auto-update after you import the offline-installed-game.

Some games provide base installer and patches, but GOG often only provide limited versions of patches at the same time.

That is, it is very hard to rollback to an old version, if you do not use GOG Galaxy.

GOG Galaxy is known to keep 5 past versions, so you can rollback to the version you want.
But install different versions at the same time is not directly supported.

Yes for Linux and Mac.
Just select different directory to install the game.
Then you can have 10 versions of the same game installed. :-)

Under Windows, you will have a lot of troubles.

Turn off auto-update and everything should be fine.
Or just do not import the game to Galaxy.

Well my original plan was that, but galaxy seems to have found the game on its own. I'll keep messing with that, but you've been a great help thanks a ton!

Depends on the game. Some games store data about them in shared spaces (like the registry or the documents folder), so installing multiple versions will not work. You will need to uninstall the previous version (and the data it stored) before installing the new version (even if an older build) or you will run into issues.
Other games do not store anything in shared spaces, but only in their installation folder. Such games can have multiple versions installed.
