Apparently, Breathedge is very much "humorous Subnautica in spaaace", but I've heard it's much more of a mixed bag, especially in the late game. Don't really know anything more about it than that, though.

Nandeyanen: Have you checked out Grounded by Obsidian Entertainment? It's fairly similar to Subnautica in the building and exploration sense, but it's set in your average backyard where you play as children who have been shrunk down. I haven't played it myself (yet) but I watched CohhCarnage stream it and it looked like a lot of fun, although still in development. Sadly it's not on GOG but seeing as both Pillars of Eternity games and Outer Worlds are on here I wouldn't be surprised if it makes it over eventually.

Falci: I've put 10 hours in No Man's Sky so far, I'm enjoying it, but it is way more grindy.

DarrkPhoenix: While I haven't gotten around to trying it yet, Valheim has been getting a lot of positive attention as another quality survival craft game, so that may be worth looking into.
I picked up the game in the final days of steam's end of the year sale. Put in almost 60 hours already, but I admit I ran a bit out of gas.

It's very fun, the building mechanisms take a bit to learn and get used to, but they work great. Combat is good, never amazing, though. Going from one biome to the next feels a bit too hard and time consuming right now, unfortunately. New enemies do a lot of damage and improving your tech/equipment properly takes a lot of grinding for resources, specially metal.

You use food to increase health and/or stamina temporarily, but I wish there was a way to do a bit of an incremental permanent improvement to both sometimes. This would make things a bit easier.

You can build portals to move around world areas quicker, but they don't allow you to take metals with you, which really sucks, since most of the grind is due to them.

Still, it's shaping up to be a great game and I hope the devs keep improving it and, maybe rebalance it a bit for an easier time.

(Currently, I'm in the third biome/boss: the swamps)
