From what I gather, today the last episode(6) will be released, I was wondering when it will be up on gog.

It's out!

The full download has been available since 19:00 MEZ, the patches followed some time later. Though I couldn't wait and downloaded the full game again, it's now installed and I can't wait to play it.

It was NOT available on Steam when you wrote this. It has been released almost at the same time here on GOG.

the download system of GOG handles episodic games so awkwardly.
for example, why do we have a load of 700MB files for the last chapter?
are they trying to make them fit on a CD-RW? in 2015?
not that it's that difficult to download them all, but the whole system is so clumsy.
say anything you want about DRM, but the Steam client is a much more professional system.

Do you use GOG Galaxy? I think you can feel more comfortable with it, since it can download->install games with one click, like you do on Steam.

Is the patch just the 'update' from 5 to 6? Or do I dl all those things as well? (probably not needed but just asking as I don't want to waste bandwidth)

you can get a "update" which get you from 5 -> 6 ( about 2,8 GB )
