The game description says
- Offline or online co-op, 1-3 players
... does anybody know if this means that we can play local lan games with the classic installer and without having to use galaxy?

I'd also like to know this. I can definitely understand not allowing online co-op play if people have the same copy, but LAN is generally a different thing. It'd be exclusively for my wife and me.

The game is not P2P, so it does not support LAN play.
You can play online, or you can play single player offline, or local-coop offline (eg: hotseat with up to three people on the same machine)

For local: you can each use different controllers, and or a keyboard/mouse.
