is it possible to increase the laps, i want a long figure of 8 race but the races are too quick for it!

There's a mod for Flatout 2 that lets you customize the number of laps, number of opponents, difficulty, etc. I've very confusing to install though. It's on moddb if you want to try it. It's called the FOJ Community Mod. You need to download all 3 parts and you might need to edit one of the files in a text editor for it to properly work.

Not sure about Flatout 1 though.
