I know it should be possible to become a made man for all families together, but I can't manage to do this.
With exception of the SAD quest for the Wrights I've finished all quests.
The SAD quest is already in my quest list.
Currently I'm a made man for the Bishop family.
Becoming a made man for Salvatore seems to be impossible.
Getting into his bar isn't a problem, I can get to the stairs without getting noticed.
Whenever I go up the stairs in combat mode, with sneaking or with the 2 combined with or without NPC characters Mason starts attacking me right away.
My sneak skill is 25%, I never added anything to it.
Is there a trick to get passed Mason or is my sneak skill simply too low?

I think your problem is that you are already a made man with the bishops. That makes Mason hostile no matter what.
If you weren't a made man, you could walk up there and talk to him, convincing him to let you speak to his boss.
From what I've understood it should be possible to become a made man for all 4.
You can have all 4 listed on your rep sheet simultaniously.
Restraints are you need to be a made man for Bishop first and need to save either Wright or the Mordinos for last.
You can't kill the bosses directly, you have to assissinate them so you don't get to be blamed and their people won't attack you.
For Bishop I used super stimpacks.
Found a piece over at No Mutants Allowed, a specific guide to becoming a made man for all the families.

I read simular in Per Jorner's Fallout 2 walkthrough (refered to in the link you provided).
In that one it states a sneak percentage of 78 and agility 10.
I'm currently at 39% sneak and do have 10 agility.
I'll get back on this once I'm around that percentage and have tested it out.
If I can't manage to, I'll wipe out the Bishop family to have my made man status revoked.
Btw thanks for that link, I saw it before but forgot all about it.

No problem!
Of course, if you could get your hands on a stealth boy, that might help a bit. Unfortunately, I'm not sure if you can find one in Fallout 2, just Fallout 1.

If you are playing the game in normal or hard difficulty, and if you don't mind be a bit cheater, you can change the difficulty to easy.
This will raise significantly the percentage of your skills.

I just tested that and it seems to work.
I got sneak to 87% that way and managed to talk to Mason who told me Salvatore was expecting me.
I didn't try to get in there, but it should be possible using combat mode.

From what I've understood is that the only way to pull this off is to start with Bishop and to end with either the Wrights or Mordino.
Mordino orders you to assinate Salvatore.
Bishop's text changes if you're already a made man for another family.
So it's always Bishop 1st and Salvatore 2nd or 3rd.
You can't assinate anyone till you got and finished all quests for all families.
Once done you can report back to the bosses.
Bishop is easy as no sneaking is necessary.
Mordino requires a certain level of intelligence and/or luck and/or charm.
