unfortunately, the game does not work under Mac OS El Capitan (10.11.x)

But there is a way to fix it: You need to change some screen settings and update the Wine engine.

1. Prepare the game app
To avoid checksum errors, you need to run the "broken" game once and wait for it to crash.

2. Install WineSkin to upgrade the engine (if you haven't yet)
You need to have WineSkin installed with the newest engine (current one is 1.9.5). You can download WineSkin here:
http://wineskin.urgesoftware.com/
Install the app, open it, download the newest engine. This will install the newest engine globally on your system.

3. Update the Wine engine
Then, right-click the app, select "Show package content".
Navigate to Contents > Resources > Game
Right click on "Evil Genius.app" and select "Show package content"
Double-Click "Wineskin.app"
Click "Advanced", go to "Tools" and select "Change Engine Used"
There select the newest Wine engine (currently 1.9.5) and click "OK", now wait

4. Set the right screen properties
Click "Set screen options" and use the settings you can see in the attachment
Then click "Done", close WineSkin and every Finder window

Done!

Now you can run the game app - have fun :)

Your instructions are amazing and work.
I followed this up to most of the steps, when I go to check the resources however, there is no game folder to select from. I would love somemore help with this i am so close to dominating the world.
Have you done the step twice? The first package contains just another package. This is somewhat confusing. You need to select "Show package content" with the EvilGenius.app - then again search for the Wineskin.app within the subfolders (should be Content > Resources > Game) and select "Show package content" for Wineskin.app

If you want you could post a directory tree or screenshot and I'll try to help :)

I've followed all of your instructions however the game still does not open. The run report mentions the initial wineskin engine was used despite my wineskin engine version being updated to the latest version: Wineskin 2.6.2 Engine: WS9Wine2.22.

Evil Genius opens in the dock and it seems as though the app is working fine.. But, nothing happens. Normally it should start a cinematic. What do I need to do from here?

There is a bug right now going on with Wineskin and Mac OS High Sierra, and it seems like you suffer from it.

Open the Wineskin options (so the Wineskin.app inside the game's app), click "Set screen options" and there make sure you UNCHECK "Auto detect GPU for Direct 3D".

This should make it work again.
If not, use an engine lower than 2.x since there were some major changes inbetween 1.9.x and 2.x.
