I also see the system requirements recommend a 120MHz Pentium... would cycles = 120000, cputype = pentium_slow be ideal?

Default is 80000 cycles, I turn it down a notch with Ctrl+F11. Imps and text box flashing seems to be a little to fast for my liking. You really have to experiment with cycles because every system is different. Decrease or Increase CPU Cycles by hitting Ctrl+F11 or Ctrl+F12 in-game. If you temporarily enter windowed mode with Alt+Enter you'll be able to see how many cycles are being used. When you exit the game and re-enter, it will go back to default settings unless you manually change the cycles value in the dosboxDK.conf file under [cpu].

I'm the opposite - I turned it up to around 140,000 cycles (permanently via editing the file). :D

I've been playing DK1 on rigs that are much more powerful than the ones back in the day, for a long time. I got used to the extra movement of creatures and in-game mouse scrolling and such and now prefer it. When I first loaded GoG's version of the game, I felt like the game was swimming in molasses, lol.

Anyway, yes, you can change the cycle speed to suit your preference with the hotkeys mentioned above, or manually editing files, or just using the dosbox graphic mode setup tool that comes with.

When you're in-game, it is locked to a specific rate of play (approximately 20 turns per second), and only the main menu, map screen and loading behaviour will noticeably increase in speed.

I'd consider DK1 to be fairly intensive as far as DOSBox games go, especially if you press ALT+R and play it in a resolution of 640x400.
I tend to leave my config as cycles=auto, core=auto, cputype=auto. This gives you more than enough juice to run a game smoothly.

In my experience, there is nothing to be gained by limiting the speed.

Thanks for the clarification regarding the play speed and the advice. I was hoping to find a way to prevent the super-accelerated map zooming at full performance, but that doesn't appear to be (easily) obtainable.

Yeah, aside from manually pressing CTRL+F11 and CTRL+F12, there is no way to automatically toggle between speeds depending on how intensively the game is performing.
