I'm trying to enable console commands, but I can't find a way to actually open the console in game. Any tutorials I've found have been just to enable them or for other game clients.

Does anyone know if it auto-binds to a certain key or which file I need to edit to set one?

Create a shortcut to your 'DAOrigins.exe' file in the 'bin_ship' folder in the installation directory. Right click on the shortcut, go to 'Properties' and then in the field 'Target' type in:
'-enabledeveloperconsole'

Once you've done that, open the '\BioWare\Dragon Age\Settings\KeyBindings.ini' file in your My Documents folder, find the line that says 'OpenConsole_0' and change the value (which is after the '=' sign) to a key you wish to use.(i.e: "Keyboard::Button_Tilde" or "Control + Keyboard::Button_F10")

Additionally, download the 'Make console commands visible' mod from the Nexus here:

This worked for me as well. I just wanted to add that since I'm not very tech savvy I had to look up somewhere else that you want to leave the rest of the text in the target field with a space between -enabledeveloperconsole and "H:\Games\GOG Galaxy Games\Dragon Age Origins\bin_ship\DAOrigins.exe". So in the end the target looks like this:
"H:\Games\GOG Galaxy Games\Dragon Age Origins\bin_ship\DAOrigins.exe" -enabledeveloperconsole
