I already have a lot of games here on GOG and now it's time for my first forum post here. ;-)

Does anyone know the diffrences between the Doom 3 BFG Edition (incl. versions of Doom 1 & 2) to the latest release from 2019 (I think it was the 25th anniversary edition)?

The 2019 release of Doom I and II are new ports of the engine, made in Unity.

There are many differences, some sprites/textures were edited and there are some small changes to levels, for a summary see https://doomwiki.org/wiki/Doom_Classic_Unity_port#Differences_in_Doom_and_Doom_II (some of these were already in the BFG edition, do it's not a perfect list to answer your question)
Also I think Doom II is missing the bonus level from the BFG edition.

AFAIK the Unity version is the recommended version in the speedrun coomunity these days, because it has the best HD graphics support of any official release without using a sourceport. Unfortunately it is not on GOG so far.

I don't think there are differences in the newer re-releases of Doom 3 to the BFG edition.
DooM 3 2019 include only single player, a Slayer skin for DooM Eternal, DooM 1 & 2 not included
