On my options there is none for controls? I saw on u-tube you can jump with the z key but mine will not jump?

you cant jump in the native doom engine, to jump you have to use a port like zdoom, gzdoom (opengl) or any of the other portsl
you can download these source ports totally free, you just need the *.wad files from your gog-versions.
