Good day

I don't own any Divinity game except Divine Divinity and Dragon Commander and am interested in buying the rest of the series with all possible content in as few purchases as possible from GOG.

Can I simply buy Divinity: Original Sin 2 - Eternal Edition to get everything? It's fine if I get another copy of Divine Divinity from it.

Or would I be missing out on the stuff from Divinity: Original Sin - Enhanced Edition Collector's Edition?

I also see the Source Saga but that looks like it's missing goodies.

Thank you!

Yes.
The D:OS 2 Eternal Edition bundle contains all the extra content from the D:OS EE collector's Edition.

One thing to note is that the Eternal Edition bundle does not include the Classic release of D:OS, just the Enhanced Edition. Since you already have D:OS, though, that isn't an issue.
It was not included because it caused some confusion offering the original and updated releases of the game, there is less need for the original release now than when the Enhanced Edition was first released (one of the reasons it remained available with the purchase of the EE is due to the change in system requirements in Windows, with Classic being 32 bit and using DirectX 9c, while the EE is 64 bit and requires a GPU with hardware support for DirectX 11), and in general the EE being more up to date and a better experience.

The Sir Lora DLC is not included with D:OS 2 in the Eternal Edition, or Definitive/Divine (only being added with the Definitive Edition release). It was added for free to everyone who bought D:OS 2 before the DE release, but after it must be purchased separately.

Thank you for the answer, it was very helpful!

Unfortunately, I only have the old Divine Divinity and Dragon Commander, not the first D:OS. I'll have to see if GOG offers the original version of D:OS just so I can have it for archival purposes and series completeness, even though I intend to play the EE version.

This also means that there's no reason to purchase the Source Saga. However, hopefully all of the versions will say "in library" after my purchase to satisfy my OCD haha. Sometimes GOG doesn't do that even though you technically have all the inferior versions when you purchase the best one.
