I'm not sure how to play online Co-Op with a friend (does it work if they have the Steam version?)

Also it says "Not connected to the online community servers", despite me being logged into GoG Galaxy

Read here.

«GOG version supports LAN and Direct Connect multiplayer, no matchmaking / lobby.»
Right. So I've got a friend I want to do online Co-Op with.

I have the GoG version, they have the Steam version, how do we play?

1. In your router (often under Apps and Gaming), forward these 2 ports (23243, 23253 (just use both tcp and udp)) to the computer you are playing the game (find the ip of your computer by using ipconfig in a command promp window, should be Ethernet Adapter ... if you use a cord otherwise Wireless adapter ..., use the number in IPv4 Address . . . :).
2. Allow these ports for incoming traffic in your windows firewall (Add a new rule for incoming traffic).
3. Enable Direct connect in Divinity original sin config (you can press the top button on your minimap ingame to get the UI to enable it.)
4. Send your friend the internet ip you have http://www.whatsmyip.org/ can be seen here.
5. Have friend connect.
