I'm Looking to Start from the very beginning as in From the main menu beginning with just 1 other player (No mods allowing 3 or 4 players) Just straight up me and another player.

I would, but I don't want to install Hamachi. (Hasn't there been many better VPN clients since Hamachi anyway?)

I'd do direct IP though.

Hamachi is direct IIP and it's the most stable and versatile VPN that I've used (And I've used at least 6 different ones)

The whole direct IP by port forwarding is a mess is too much of a hassle and a headache.

So How do you propose to play this then?

Direct IP, lol. I'm used to forwarding ports in my router for programs to work, like my torrent client, FTP server, etc.

So what do you want to do?
