I have the Steam version of the DX:GOTY working just fine (in non-widescreen resolutions) on my MacBook (GMA 950) using the game's built-in OpenGL renderer. I've also got the GOG release working equally well (also in non-widescreen) on my 2010 11.6" MacBook Air (GeForce 320M) using the game's built-in 3DFX Glide renderer under the nGlide wrapper.

Both work well using CrossOver Games 10.3.

As an addendum, something weird seems to have happened; I've been able to use the OpenGL renderer just fine on the Steam release of Deus Ex GOTY (both on my GMA 950 MacBook and my GeForce 320M MacBook Air), both with and without the enhanced OpenGL renderer.

However, with the GOG release, both it (as well as DirectX) doesn't seem to work; under both OpenGL and DirectX all I get is a white screen. The game does work fine though when using 3DFX Glide under nGlide (NB: I've also got MDK to work this way as well). Performance is still pretty good overall, even though nGlide adds an extra layer of software abstraction to the mix.
I'm running it fine using Wine 1.4rc3 and the Direct3D 9 renderer, Kentie's Launcher and New Vision. Link to the Direct3D 9 renderer:

The enhanced OpenGL renderer breaks my mouse. The original Direct3D renderer causes screen flickering, which can be solved by running Winetricks ddr=gdi, but I see no reason not to use the Direct3D 9 renderer. My cursor feels kind of sticky in the menus, but viewing is perfectly smooth.

Yeah, I've just now realized what happened; in CrossOver Games, when you do an install of Steam, the built-in installation assistant downloads and installs DX9, which doesn't happen when you install Deus Ex with the GOG installer. I found that installing DX9 in my Deus Ex bottle and setting the game to use DirectX was what finally got the game to work. The OpenGL renderer doesn't work at all when you try to go up to higher full widescreen resolutions (odd, since for UT GOTY, which is powered by the same engine driving DX, it only works on CrossOver/WINE using OpenGL).

My current setup on my 11.6" MacBook Air (10.6.8, CXG 10.3) is DX with DirectX 9 installed and the enhanced DX9 renderer linked above; with all of the graphics settings turned up it looks great at fullscreen 1366 x 768.
