I have the original release version of Deus Ex, lovingly stored in its original box since it was first given to me as a gift by a friend. It was a great game and it's probably high time I played it again.

But I'm curious: what does the GOTY Edition have that the original did not? Any real extra content?

Basically it's the same game with a load of patches and a multiplayer mod. It's necessary to patch the original game to the goty edition to be able to install mods to enhance (or break) the game...

I don't see Mulitplayer listed on the gog.com page for this game. did they take it out of the gog release or is that just a typo. I just fired up my retail disk copy and I still see servers up.

Check your version at the main menu. If it's v1112fm, it has the multiplayer patch installed. And I would hope it did; it's required for basically every mod.
the difference is

Original Deus Ex = Policeman in Paris use native French, and do not use English with a French accent.

Deus Ex Game of The Year Edition (GOTY) = Policeman in Paris use English with french accent.
