Overwatch should be a toggle. I think half our click is for this, the game could spare our fingers (and ears, all those blips!):

If Overwatch is toggled, it is kept on after a turn. We should be able to remove it to make something else instead.
Too, if we move, if we have an action then overwatch is installed just after our move, BUT we should again be able to remove it to do another action instead.

so you'd like to be able to move and have the game automatically choose overwatch for the second action? There is currently a keyboard shortcut for Overwatch (4).

I appreciate the idea and I'll think about how this could be done in the future but there's almost no chance of this change getting into the Build 52 update at this point.

Yes, or even not moving: at first it was for the close battles where almost everyone stand in overwatch behind their cover for many turns, save sometimes one to repel incursions.

Other idea: to be able to chose what we want as a toggle: some may prefer the Defense? (maybe to hide a too injured toon)
So the choice of toggle for each toon could be None, Overwatch, Defense.

This sounds a bit like a programmable AI for player units. I had been interested in implementing that feature at one point but it requires a fairly complex UI for the player to manage it and I am not sure it was worthwhile. I will definitely add this idea to my notes for future releases though.
