The Deathtrap shop page states that GOG Galaxy is required for online multiplayer which is perfectly fine, but does the GOG Deathtrap feature a LAN mode?

Yep - it features LAN, and that should function without Galaxy

B0SC0: Yep - it features LAN, and that should function without Galaxy
A bit late to the party, but how do I access the LAN mode in the game?

I have to option to play Coop / PvP but then it wants to connect to the Neocore Servers? I don't have Galaxy installed, just launched Deathtrap by itself.
