When I first domesticated dogs, they just showed up not long after I got the tech. I've had goats and sheep for some time and even had a stables built for years and no sheep and goats show up. Is the only way to get them to buy them from a trader?

No it's not the only way, you can also capture some of the wild animals and tame them. When you click on them you will see an option for it.
