I've been playing this on a custom dosbox install and just noticed the game.gog image that is typically mounted in the default gog installation.

Did I just set myself up for shenanigans later in the game, or are the files in the game directory sufficient and this gog package just has a weird default setup?

It's totally okay to run with just the factory original files as provided under the DARKLAND\ directory as-is in a stand-alone installation of DOSBox. It's been being done since almost as long as DOSBox was a thing on SourceForge 20 years ago. However, the settings provided in the DOSBox config file that came with the GOG distribution of the game are a handy thing to have and employ as they are a fine tuning over the generic DOSBox settings.
