I've tried this on my Windows 11 laptop. I installed GOG Galaxy and Croc remastered. The game just has a black screen for a few seconds, then shuts down. I also tried installing this on my Steam Deck with Proton, and it doesn't complete the install after 95%.

On my Windows 11 laptop, the original version runs fantastic. How do I fix the remaster?

I am seeing a similar problem; it does not run at all for me, and even with a Windows 11 PC that runs Overload at 5K Max settings easily. It's the application itself.
I also have issues getting the game to run. First attempt is a hung program, which ending task closes, but upon second attempt, I get a full system crash with a Video Scheduler Internal Error.

Did you patch your game? I had a similar issue of the game not starting and I found out from here there was a patch. https://www.gog.com/forum/croc_legend_of_the_gobbos/i_cant_turn_on_the_game

I have not run this on Windows so I can't comment on GOG Galaxy, but using the Heroic Games Launcher it usually shows if a game has a patch. Though for some reason this game did not. I had to force check for an update. If the Galaxy client has a similar feature it should patch your game and hopefully stop hanging.

Also, how did you install it through Linux? I am running the game on my Arch Linux install just fine using Heroic Games Launcher. Being as Steam Deck uses a Arch based distro it should hopefully work as well. I can't comment on all the steps on SteamOS, but I might be able to slightly assist. As I know SteamOS has a desktop mode and you can install HGL in it as well.
