Just bought/downloaded Creatures Exodus here on GoG, and when I start the game I do not see the third option (center button) that was for the ship only (don't remember name now), but saw it on a you-tube video while looking for info about the game prior to buying it?

Does this version I have purchased through GoG not have that option? Or have I not installed it correctly? I am brand new to GoG, as well as being brand new to the Creatures series...just registered on Gog about 25-minutes before buying the Creatures Exodus game, so all the user interfaces, etc., are new to me and it's possible (probable) that I am overlooking something...any help appreciated.

You mean the docking station?

It's complicated, to put it neatly. The Docking Station servers and registration are dead, but there are ways around it, from simply downloading a file, to installing an entirely different world. (Which also includes the file, like C1 to DS.)
