I was wondering if there is a knack or trick or set technique to getting the ski doo over jumps. All the way from my time playing the original on Amiga, to playing it again today from gog, i've never been able to master that damn ski doo.

I've tried dozens and dozens of times, and I simply cannot get it to jump far enough off ramps to not land in the water or trees and kill all its passengers. Do you get it going in the right direction and make your last click on the ramp itself? Beyond the ramp? Either way the damn thing always falls short.

What does everyone else do?

Well, first: I use the ski doo as little as possible. It only needed on very few maps (Evil Knievel, for example). Even maps that imply that it must be used (My beautiful skidoo) can be more easily completed without them.
If you have to use the ski doo: it needs to build up speed for jumps, so go for the ramp from a longer distance, in a straight line, and always click as far beyond the ramp as possible.
