Maybe you should have read before buying it (supposing that this is already answered in a FAQ).
I think all games sold here are only in English.

As much, I remember that many years ago I was able to change the language of the text in the demo version, in some config file. But anyway, voices will be in English.

And I don't think you can ask your money back, because GOG can't be sure that you will not own the game anymore.

(Gajes del oficio)

EDIT: I installed GOG version, just to check. Its files structure is totally different and renewed (what does SCUMM has to do with this game?!). And no, there is no config file like the one I mentioned before. So: I'm afraid English only. (I didn't expected to see other languages here, either. That's a decision from different publishers)

If we're talking about Broken Sword 1, the game page does say the game is available in Spanish. Still, that's probably referring to the Director's Cut, not the original version which is available as an extra. If you want Spanish voices you'll need to play the Director's Cut, but I believe you can actually enable Spanish subtitles (with English voices) in the original version using ScummVM. You need to run scummvm.exe and add the game manually to be able to choose a language, though.
Some hours later I tested Director's Cut. And yes, it's multilanguage. I didn't read on the GOG page then that it included some other languages.
Automatically, it opened in Spanish. Great! And without any problem through Wine.

Now I test the original Broken Sword again. True, in the options of ScummVM for Broken Sword I can choose between a lot of languages, including Spanish, ... for text. The audio seems to still be only in English. (If you don't see subtitles at the beginning, enter the menu by Esc and select "Texto")
Hard to access, I must say. :-(

You can download the spanish voices from the scummvm website. Just go to the Games section and look for the Broken Sword Voice Pack AddOn. There is also a Cutscene pack so it fix everything.
