Has anyone run into this issue? Sometimes when I try to save in the middle of the game it just crashes.

Happens to me but I also encounter random crashes and freezes at other points too but usually only after 30-60 minutes of gameplay: https://www.gog.com/forum/bioshock_series/performance_crashes

I've given up trying to find a fix.

Same here.
It's a shame, I do not understand why nobody fixed all these fucking bugs.

If we do not have a solution soon, I will ask for the refund.

Try to use F12 for rapid save. Crash is strangely mostly during main menu
