Or isnt ist possible ?
I couldnt find such an option in the keyboard-definitions-menu.

No, I don't think that's possible. I was looking for that feature too, because sometimes the angle is really weird. Maybe they'll add it until launch.

To some degree, yes, using the mouse wheel. You can also switch to a bird's-eye view (with zoom-in/-out) if you hit "o" (the letter not the digit).
