I started a new BG playthough, and I seem to be doing rather poorly. I know nothing about DnD party balance, but I picked an Elf Ranger. After meeting Imoen and those two guys who want to go south, everything seems find as I kill a few mobs. Almost immediately after that, I can't seem to survive. When I come to the first town south of where I start (Bernost or something? I am bad with names), I agree to be the musician's body guard. When I tell her I won't kill the men, she instantly wipes out my entire party. I thought this might just be a thing that I wasn't strong enough for and traveled farther south after I reloaded. In my first encounter, the mage that I met died. In the next one, the dwarf warrior dies. I then run into some Hobgoblins, and while I kill a few, I am soon overwhelmed and I die. I replayed this fight a few times and I am still dying. Did I miss something? Am I going the wrong way? I am making liberal use of the pause feature to try and plan fights, but nothing seems to work.

Are you using ranged weapons? They make much of the game easier. Also, you may want to go back north to the Friendly Arm Inn and pick up the two party members there. One of them is a Druid, who has a variety of useful spells.

I am using ranged weapons (I did throw some points in short and long swords since I assumed they may come in handy at some point, but I may be mistaken). I also assume there are easier enemies to the north.

Also, how does it work when I have more than 6 party members? Are the spare ones stored somewhere for when I want to use them? If so, do they level in this magical place, or no?

You aren't allowed to collect more than 6 party members. You have to kick out one of the people you have to make room for the new one. Characters who have been in your party and are removed do not gain experience.

It's all trial and error and playstyle. I could tell you that Imoen and Minsc rock my socks, but they might be completely wrong for your party.

Characters bring different skills, alignments' personalities, and agendas to the table. And they will bitch and argue with you and each other, that's half the fun.
It helps a lot if you have good stats. For an elf ranger make sure you have 18/.. str, 19 dex and 17 con. Int and wis are useless and can be dumped to the minimum. The extra quest rewards you get with 18 cha help at the beginning.
Since the second proficiency point spent for a weapon doubles the damage output compared to the first it's essential two have ++ in bows, with a composite bow and lots of arrows you can do lots of damage.

You should be aware that Baldur's Gate isn't a fair and balanced game like Icewind Dale, you will find many situations which you won't survive on the first attempt, using save/reload for manipulating the dice rolls or doing some grinding with easier stuff and returning when you've gained more experience is an element of many classic non-linear rpgs where you can go wherever you want but get slaughtered if you go anywhere before you're supposed to.

There are many cheesy ways to exploit the engine, but I doubt you want to hear them.
Until you get much more use to the games rules, try to keep 6 members in your party. You especially need a healer like a druid or cleric. Remember to read the manual, AD&D 2nd. Ed. has some really crazy rules where sometimes lower numbers are better than higher numbers i.e. armor class and THAC0. Always switch to melee weapons if an enemy is adjacent to you as they get a major bonus to hit you if you are using a ranged weapon.

Upon arriving at Beligost, I went into one of the inns and now I have found a dwarf who kills me every time I enter, no matter what I do. He sometimes one-shots my main guy. It seems nothing I can do will kill him.

Nothing forces you to go in this inn. if Karlat is too much trouble you can avoid him and fight him later. But if you want to kill him, you should try some spells. Jaheira's Command is really useful spell. If sucessful it puts enemy out of combat for one round and you are free to pound him into oblivion.
Try to do some quests in Beregost and its countryside, you don't have to rush for main quest. And each time you encounter somebody or something too strong for you, just go away if possible, you can always come back later.

You can try and hit him with the blindness spell. That's an overpowered level 1 spell that will seriously soften almost every baddie in the game. I think you can pick up a scroll or two at the high hedge, or from random drops.

Also, in general, don't hoard buffing potions too much. Everytime I get to the end of the game I have so many leftover potions. And they often make tough fights much easier.
