I am curious if this is anywhere in the game, as this will dictate whether i even play Baldur's gate 1 or simply wait for Baldur's gate 2 enhanced edition.
Animate Dead has always been a level 3 priest spell and level 5 mage spell in BG1/2, and the enhanced edition is just a reworking of BG1.

Priests will learn it automatically when they reach level 3 divine caster level. In BG1 you can only get it if you have TotSC installed, and also get lucky in a random drop -- it's not available any other way. In BG2 you can get it from Galoomp in Waukeen's Promenade, or from Ust Natha.
I would have thought that a mage could use animate dead, considering the class is called "Necromancer", but priests are actually the ones that can raise undead minions? So i need to re-roll to Priest of Talos? Also doesn't enhanced edition include Tales of the Sword Coast? Where on the sword coast would i obtain it? I really want to raise undead for roleplay purposes.

Mages can use Animate Dead. It's just that the scroll is not available to buy, only as a random drop. You do not need to re-roll.

The enhanced edition includes TotSC.

I repeat, you cannot obtain it in any way but a random drop... without cheating. If it is that important to you, use the console to give yourself the scroll.
