let me guess, it keeps resetting to DLaa?
if so thats your system making choices for you and has nothing to do with this game

I'm using FSR 1.0 at Ultra Quality and the game always turns off AA even though I've set it to TAA. How can I force this setting to stay?

FSR doesn't support TAA at this time, which is why your software is turning it off... again absolutely nothing to do with BG3

the game supports it just fine although it keeps turning it off after every restart of the game
