The Definitive Edition claims there are "additional episodes" in the game, but after replaying thorough the whole game more than once the only one I've seen is the intro before the main game... Am I missing something or that's about it ?

It is a mistranslation. The additional episodes are actually additional story parts and refer to the different scenery of the arranged mode, especially the ending.
