The title summarize the question.
I noticed that sometimes the game will crash when trying to display the ubisoft logo intro OR when loading a new 'game chapter' (I am still at the very beginning of the game).

After several reseraches on the net and some tries I discovered that it is an issue related to connection status.
And I can confirm: If my PC is disconnected from the net, than the crash happens. If it is connected, the game work correctly.

This means that the game silently requires an active internet connection, not only when you start a game but also when you come to another 'stage'. But I have an unstable connection, so my pc can disconnect at any moment, wich can means that I can complete a mission while my pc is disconnected, than the game will crash without saving the very last progress (it happened when I completed the tutorial. The game was unable to load the first mission, crashed, and I had to retry starting the tutorial from the beginning, and being forced to watch again from the beginning all the movie about Desmond in the Animus [you cannot skip it any way and it is very long]).

This is a very bad issue for me, and I'd like to know if there is any solution (or any fix) that solves the problem.

Other details:
I play the game under Ubuntu 14.04 LTS (64 bit) with a custom wine build (a wine version builded by myself). But if you find a solution wich works under windows tell me it. Perhaps I can find a way to apply it in some way, even if I am using another OS.

To be honest... it's the very first time I hear about it. Are you sure you checked for good AC game? Because, for my knowledge, AC1 never had any connection checks. It was also never bound to anything like Uplay... Of course, I could be wrong, but still...

While it should not be related - what version are you using? DX9 or DX10? Did you try the other one?

I think you have other "crash: issues... I play this on a pc disconnected from any network and it's just fine.
Seeing I am using AC1 from gog on Ubuntu, I have installed DX9 (wich can be installed with winetricks) but I didn't try DX10 (wich I don't know if it is yet supported on wine/winetricks).

Perhaps the problem is related to DX9?

However... yes... I'm sure. At least on my PC if I am not connected on the net, the game freezes when loading the ubisoft logo and in the other situation I said before.

However thank you all for your replies :)

EDIT: I can link two older GOG discussions where it is confirmed that the GOG version try to connect to a site:

1) https://www.gog.com/forum/assassins_creed_directors_cut/internet_connection_on_start

2) https://www.gog.com/forum/assassins_creed_directors_cut/constant_crashing

In my situation this leads to a game crash. I cannot configure firewall, but perhaps my problem could be related to the wine version I'm currently using (custom build with a patch). I will try to run the game with another wine version. And I will let you know if the change solved or not the issue.

This is strange... but maybe this is really something with the Ubuntu? Just in case - I would recommend trying to get in touch with GOG Tech. Support. They have a lot of work, and with sale probably even more, but leaving them a message is a good idea - maybe they know something we don't, or at least help you work around the issue.

And I mentioned DX9/10 causes the game, at least for me, gets twitchy if I try to run it on DX10 - tearing in both video and sound etc. Sadly, but at least for AC1 and 'all of' AC2... the optimalisation isn't the best part of the games. Especially on some hardware.
