Subtitles, even if you don't try to click away portions of them, are many times rushed, or simply timed wrong compared to the voiceacting.
Ummm what is the point of creating a separate topic for every little thing that bugs you in this game that was made in 1995? Pretty much everything that you are decribing work the same in this GOG version as in the original. I wouldn't expect anyone to change any of those things - this was always a rather niche title. That's just how it is.

1) because bug always get listed per thread
2) just because the original was buggy too, doesn't mean it's ok
3) the game might have been made many years ago, doesn't mean than it's ok
4) so people know
5) if you don't sign there is problem, people will think there are no problems.
But you are aware that things that you listed probably won't get fixed? I understand that this game is not perfect, and no game is, but I think there's a difference between game-breaking stuff/issues with compatibility/not being able to run the game and subtitles not matching the voice when you click through the dialogue too fast. You would have to create some kind of remake of the game to sort these things out and with this title there's barely an interest to begin with. So, I simply think that you're wasting your time here. Do you do the same things with other games as well? I don't know if you've played e.g. the Gothic series, you would have to flood the entire forum with small issues about them, and each would be a separate topic.

As for Anvil of Dawn itself, I think that all the things that you mentioned are very minor issues that you either get used to or ignore. I was able to complete the game several times and enjoyed it a lot and considering that the game's sub-forum is rather silent it means that either people are not playing the game, or are able to complete it with these issues and maybe enjoy it, who knows.

And no, you don't need to make a remake. Well, likely for the clashin-with-boulders bug and the enemy-magic-projectiles-during combat you would need, but not for the subtitle-timing.

Also, the fact I could not re-enter Underground City IS gamebreaking in a sense. I can go forward, and likely finish the playthrough, but a good portion of the game is still cut from me despite the design. Or the design is heavily flawed, and doesn't mark the possible permanent splitting of the alternate routes. The twoheaded giant on that bridge implies the passages should be exlusive.I wonder if you can visit those areas coming from the other side. I also wonder if the split is an intended feature, why no guide/walkthrough mentions it.

Yes, I do this for the other games. Pray, they don't release Diablo 2 original.
But no, I don't play Gothic, nor do I plan to. FPP games are usualy off-limits for me, the tech usualy gives me computer-sickness. This is a rare exception.

PS: enjoyment is not a factor to wether a bug exists or not.
Being unable to come back to Underground City seems to be a bug, but I haven't encountered it myself and I remember backtracking a lot. It's even possible to go both through the Reed Plain and the Gorge Keep in the same playthrough.

Well, if that's your thing then I won't disturb you about it anymore. It is a good thing to point out possible issues with the games in hopes that it will be fixed. I would consider grouping them in one topic though.
