Found a nice site on the net with a lot of guides for Cossacks and American Conquest. I never played this game before and I thought I need some kind of manual.

So, here you go:

Especially the European Buildup Guide seems great:

2. Game Launch

After installing the game, find the American Conquest icon in
Start Menu/Programs/American Conquest and double click on it
to run the game. It will take a few seconds to start the
Intro movie and, afterwards, the Main Menu.

3. Playing the Game

Select Single Player/Campaign to play one of the game missions available.
Before starting, you can set a level of difficulty, ranging from easy
to impossible. When you have made your choice, simply hit
the Start button - the left one in the lower right corner.

Select Multiplayer in the Main Menu to start a multiplayer game.
Here you can choose to play via LAN or Internet, create or join an
existing multiplayer game. In the settings screen you can change
the options (choose nation, colour, set alliances with players,
starting options and more). When all the settings are done, click
the Start button. After all players have hit the Start buttons,
the game host has to click the Start button to start playing.

4. Quick Start

4.1 First steps

1) Select all peasants and build a mill.
2) Select all peasants and construct a dwelling.
3) Select all peasants and build a fort.
4) As soon as the wheat is ripe (simply move the
mouse-cursor over the field - when it changes
to a sow symbol, the wheat is ready to harvest),
send all the peasants to collect crops.
5) After the food stock has started growing,
select your dwelling and recruit some peasants.
6) When the new peasants are ready, let them build a storehouse.
7) Select peasants and click on a nearby forest
to have them chop wood.
8) As soon as you have stored 800 food, upgrade your
agricultural technologies in the mill.
9) Build 5 more peasants, and build a gold mine
(European nations need a blacksmith before!)
10) Build 5 more peasants, and build a coal mine.
11) Build 5 more peasants, build a stone and iron mine.

4.2 First troops

1) Build several peasants.
2) Select and send them into the fort (right-click on the fort)
3) When peasants enter the fort, you can recruit
military units here by clicking on the correspondent icon.

4.3 Protect your city

1) When you have your first troops built, ensure your buildings
are protected: Select the troops and, holding Ctrl,
left-click on a building your troops have to enter.
2) As long as a building contains troops, the enemy cannot
capture it. Besides, units positioned inside are very effective
in defending the building. Instead of regular troops, you can
put peasants inside, but they are much weaker in defence
than military units.
NOTE: When a building is producing or researching (for example,
units are being built), it cannot defend against offenders.
In case of an attack, press "suspend production" button
located in the right upper corner of building interface!
3) As the number of your troops grows,
try to protect all your buildings.

4.4 Increase mining

1) Select a mine.
2) Press an upgrade button; up to 7 upgrades are possible.
3) Send new peasants in the mine.
4) Repeat this procedure for each mine.

4.5 Research

1) Construct a town centre (academy). The major part
of improvements is done here.
2) Click on the icon of an improvement you want to research.
NOTE: A building is not defending during an upgrading process!

4.6 Train your army

1) Under each unit icon in fort and fortress, there are
attack and defence upgrade buttons. Develop the upgrades
to considerably increase your troops' parameters.
Other improvements to increase the parameters can be
found in your town center.
