1080p looks a bit weird, the models are rather small and sometimes hard to spot.
I'm running it 1600 x 900 on the Steam version so I see no reason the GOG version shouldn't do the same.
I run it in 1080 as well and it looked fine to me.
Running 1080p here and everything looks fine. No FOV issues or anything from what I can tell.

Same here

BUT I did have friends who used to think this game looked weird and my best guess is related to what the developer said in the twitch stream: they had to scale the rooms differently because of how fast you run. Maybe that's why it can look a bit weird. I have had this game since it's initial release so maybe I am used to it?

1600x900. It was hard to get used to when I changed it from 1080 (may have actually been 640x480) a while back. I found the text too miniscule but eventually I got comfortable with it.
1366x768 is the resolution mine goes up to. Check your computer info for Display resolution.
1680x1050. Everything looks fine here.
Playing @1280x720 on a 1920x1080 monitor. In-game fonts are too small at 1080p. Using 720p solves this problem and doesn't look worse in any way.
Playing on 2560x1440, the text becomes very small, but the rest of the game very crisp! It's a worthy tradeoff.
1920x1080 with 4x4 supersampling forced through Nvidia Inspector. Works well aside from causing some red borders around text on the main menu.

In-game text (score, subtitles, objectives, etc.) is a bit small but still readable: screenshot

1600x900 on a modest PC (when it comes to gaming) and It's as smooth as silk :)
Text size is good at around 100 ppi. Running 2560x1440 on a 30" monitor is fine, but using e.g. 1920x1080 on a 12" notebook screen is overkill. Just use a resolution which fits the size of your screen.
