The Witcher 2 - Not much gore, only some blood.

Crysis 1 and 2 - You don't have to pick people up by the throat; it's possible but not required. Not much blood.

Batman AA and AC - Batman doesn't kill people!

StarCraft 2 - Beautiful game at high rez and high details.

Serious Sam 3 - It's crazy shooting but you can turn on a mode where instead of blood & gore it's flowers and candy.

How about a driving game? Not sure what the cream of the crop is but the newer ones typically really show off the graphics well

Bonus suggestion: If you don't mind Half-life 2, why not check out the Cinematic Mod? It's a complete graphic overhaul of the game making it look absolutely fantastic. It gives it a different feel, too, so it's like a whole new game.

Edit: UGH. Internet on the fritz because of this freakin' storm. :(

Hmm, good point, DIRT3 is supposed to be eye-candy-licious and it's newish.
Another good low-gore option is Portal 2 from what I've been told. A friend gifted it to me over the sale, but I haven't had a chance to play it yet. Based on what I see it utilizes DX 11 and just taking a cursory glance at the menu it looks hawt.
Fable III has nearly no gore in it at all. I don't know how it looks on PC, I'd assume pretty good.

Dungeon Siege III is possibly another option.

Prince of Persia (2008) has a stunning graphical style (in both animations and scenery) that I still don't think has been surpassed by a big-budget release. The platforming and fighting is subpar at best, but if you are looking for something beautiful then this is definitely worth checking out. The game contains zero gore (rated T) as well, as you are fighting dark shadow monsters to help an enchanted princess save her homeland from corruption.

It has this weird blur effect you need to turn off in the ini somewhere. Other than that the PC version is pretty good and looks really nice. Force FXAA on it for the jaggies with no performance loss. Also: probably want to play with a pad.

It's a good suggestion for a gore-free RPG.
The first thing that came to mind was Anno 2070. Looks nice and decidedly devoid of gore.
But if you're ok with shooters, then you should know that only robots are harmed in Hard Reset.
Also, I guess this is a fairly dubious suggestion, but check out the Heaven benchmark program. It's probably a good idea downloading it anyway if you're getting a new computer.
Well I could offer some options, but I need to know just what you consider as "amazing graphics" and what my limits are here. I just want to be clear before I throw in my own hat into this as to what you're looking for.

You don't know about Crysis? Were you hidden under a rock for past 10 years? :D Don't mind me, I'm just kidding :-) It's actually very fun shooter, and it looks wonderful (it's even so graphically intensive that most computers weren't able to run it on full details up until recently! It's a 4 .. or so .. years old game, just for the reference). Nevertheless, for the most part, you fight against people - ammount of gore is ... Your typical shooter stuff thou. Nothing over the top. I think it's a safe bet for what you're looking for - the game is clever if you want it to, it's fun, rewarding, and very well done. Also, you'll be in a jungle for most part :-P

Well, if people can promote a game with guns and shotting in it I'd still like to nominate The Witcher 2. The graphics are simply amazing and while it does feature blood and monster dismembering... the graphics speak for themselves. While the gameplay is also quite amazingly good (in my opinion, as a Monster Hunter kinda guy) maybe most other people don't appreciate it. Have a look at it, at least.

I think it IS pretty much Skyrim-level gory thou

Both of these. Crysis is one of the best FPSs released in the last decade, and Mirror's Edge is...well, a pretty unique and beautiful experience, if a little short.
I've seen some pretty gory scenes in The Witcher 2 when taking the Roche path. Much worse than what I've seen in Skyrim so far, so if you don't like gore, I'd stay away from it.

Add another vote for Prince of Persia 2008 though, superb looking game with no gore at all. Oh, and the retail version is also completely DRM-Free. Too bad the gameplay is so stale.

Crysis could also be a good choice. There isn't much gore in it, and the part where you're fighting the Koreans is truly great. It gets a lot less interesting when you reach the alien part of the game unfortunately.

I suggest you get Serious Sam HD double packs. It enable gore on default but you can always turn it off; or you can switch the gore-friendly mode such as "kids" or "hippie" mode. Which is not gory at all. Also you can disable the "gib" function. There you go, now you have great FPS game without any sort of gore.

Edit: and i'm sure you gonna love the natural environment. The First Encounter set in Egypt, expect some pyramid and middle east setting and The Second Encounter set in South America. You start at beautiful lush jungle.
