Flatout 2 contains the sound files in .ogg format.

If you look into the installation directory you will find some big files with the extension .bfs. These are actually proprietary archives. You can unpack them with bfs2pack.

Use bfs2pack to unpack fo2a.bfs and check the directory where you unpacked it. You will find the music in data\songs1 and songs2.

Thanks! I'll update the list (and get GOG's latest releases onto it) once the Insomnia tracker madness subsides.

According to this post the soundtrack can also be found in the install directory.
One can convert the sound files of Panzer General 2 to a common readable file format:

1. Get Audacity: free, open source audio conversion tool
2. Launch it and go to menu File > Import > Raw data.
3. Go to the installation folder of Panzer General 2, then into the 'soundcd' subfolder.
4. Select a file like GPLAY1.MUS (the music theme fails follow the scheme country abbreviation + PLAY + number + .mus). The other files are briefings, dialogs between generals and the music for brilliant victory, victory, tactical victory and/or loss of the scenarios.
5. Select the following options on import:

Codec: Signed 16 bit PCM
Byte order: Everything except Big Endian should work
Channels: 2 channels (stereo)
0 byte offset: 0 bytes
Data rate: 100%
Sample frequency: 22050 Hz

6. Export the file into a common format like .ogg or .mp3 (the latter one requires a lame encoder which you find here).

Cheers Geralt, going to get a few more details about that before adding it to the list though.

Are these the titles we need to catch up on, or did I not go back far enough?

F-117A Nighthawk Stealth Fighter 2.0
Real Myst: Masterpiece Edition
1849
Screamer 4X4
Ascendant
Strike Suit Zero: Director's Cut

I didn't list CLARC because it does include the soundtrack.

Frack, I missed Strike Suit Zero: Director's Cut! ;-P

Only real Myst: Masterpiece Edition is yours, I've taken care of the rest earlier.

That's how they get to be ancient. ;)

Strike Suit Zero: Director's Cut contains the music in the game files. Go to install directory\pc\main\Audio.

There you will find a few .fsb (FMOD Sample Bank) files. Extract MultiChannel.fsb with FSB Extractor and you will get a bunch of .mp3 files.
