Tokyo_Bunny_8990: It does depend on what games you enjoy. No point recommending the Lion King if you enjoy difficult racing games for example.
On GOG, any Disney game. Seriously, they look quite good and the graphics honesty still hold up but those games are hard.
You can also do self-imposed challenges on a favorite game which which allows you to further explore the game you enjoy and figure out new tricks to get better at the game. Since you already know the game, you also know what you can "remove" to make a game harder.

TzarHar: Gothic & Gothic 2, if you find it challenging getting used to unusual control schemes. They're quite difficult (as in not hand-holding you and not rubbing it into your face how to solve problems and overcome enemies) in general, as well.
Battle Brothers, if you find it challenging figuring out the tactical choices and decisions that won't result in or at least might lessen the chances of one or several of your mercenaries getting fisted by RNGesus.
i know there is a mod out for gothic 2. it would be a good time to recover the games. the combat system doesn't convince me much, but they are old games. i'll try them out
wolfsite: If you are into RPG's I would Recommend Wizardry 6 & 7, if you want an even higher challenge Wizardry 7 has some optional bosses called the Gorrors that can wipe a party out even at max level.

The Feeble Files. Great story although it might feel a bit too Orwellian to count as escapism in current times. Everything looks cute but don't underestimate this game, after more than 20 years I still haven't finished it. The puzzles will make you feel more dense than a neutron star.

Zimerius: Distant Worlds Universe is a game with a lot of options and interactions all wrapped in a excel manager. It could be something to wrap you head around for a time trying to understand its mechanics
