I've actually been thinking about this for a while and have done some research on the topic and was happy to find that both legally and technically you shouldn't have any issues with doing this, because A: the engine is open source and the code is not duplicated or stolen from the original, as it’s a project on its own. and B: When you sell a game, you sell the assets more so than the actual engine and these game engines all still require the assets to be implemented. Basically, the actual developer and publisher win from this because they are now making more money from 2 or 1 additional platform they didn't previously have.
It would be nice if you could strike a deal with both the game developers and publishers as well as the open source engine developers and have them say split the profits 60, 40 or 70, 30 or at least get some incentive to continue development on the engines.

If you're curious about examples well:
Rollercoaster Tycoon 2 - OpenRC2 (https://openrct2.org/)
Elder Scrolls 3 Morrowind - OpenMW (https://openmw.org/en/)
Jedi Knight II: Jedi Outcast - JediOutcastLinux (https://github.com/xLAva/JediOutcastLinux)
Jedi Knight: Jedi Academy - JediAcademyLinux (https://github.com/xLAva/JediAcademyLinux)
And for more here is a full list - osgameclones.com/

Some of these game engines are obviously not ready for commercial use and some are abandoned. While some don't meet criteria, e.g. includes assets. For those you'd obviously just skip over however the ones that can run the games just as good as the original engines and in some cases better with more features etc... and meet all the criteria.
Why not use them?

I'm really surprised this hasn't been requested yet or proposed as an idea internally. I mean you guys use DosBox, an emulator. In my opinion this is actually better.

This has now unofficially been added into Steam with the use of Luxtorpeda.
You can download it here: github.com/dreamer/luxtorpeda
Once installed you simply go to Steam Play compatibility tool settings and select Luxtorpeda to run games using native Linux engines.
