The FUNimation Dragon Box Sets is what i would consider to be the most definitive version of the series, mostly because it is not cropped, like the blu-ray release is. It would be nice to have both the FUNimation Dragon Box Set versions and the blu-ray versions, because the blu-ray version is a higher resolution and has most of the grain removed.

The problem with the Funimation Blu-Ray sets is that because of the poor quality of the film materials they were given, they had to put some pretty destructive filters on it to remove the grain. Because of this, the Funimation Blu-Rays actually contain LESS visual detail than the Dragon Box sets. This combined with the fact that the Dragon Boxes are full frame means they are strictly better.

Of course, the best option would be to have Funimation's "Level" masters of the show, given that they were the best of both worlds(The high detail, full frame of the Dragon Boxes, but in HD), although by the time they were cancelled in favour of the cropped release, the discs were only prepared for up to the Ginyu saga, it was only released up to the end of the Saiyan saga, and the remastering process had only reached the Cell saga.

In short: If you want Dragon Ball Z in HD, just watch Kai. That's how I'd recommend you watch it if you're going to watch the dub anyway. :)
