As others mentioned, I also suffered from delayed mouse clicks and keyboard inputs. Simply downloading DDrawCompat (a DLL file) and placing it into the install folder solved all of the issues. Game ran fine afterwards.
It's an odd, quirky game and I really enjoyed my time with it (though I didn't do well loll). There is a mini-tutorial that kick starts you but you're mostly left to figure it out on your own. It can be slow at times, though I feel like it only really slows down when you make an absolute disaster of your business.
I got this on sale for $0.89 AUD, and I can't really complain at all. I love these older, weird games and this fits the bill perfectly.

About: You build your Pizza empire, make sure to get places in good spots (Near schools, subways, etc.) deal with the Health inspectors, and send less-than-legal visits to your competitors while fending off theirs.
The strategy elements are put together pretty randomly, (designing pizzas, invading other pizza places with cockroaches, managing staff, while taking care of ad campaings, bribing the mayor), but make for a very enjoyable mix. However, beware that none of these elements present too much depth, this is a game for fun relaxation. Aditionally, some of the aspects, like creating recipes, can be automated once your headquarter reached a certain stage, if you don't feel like channeling your inner chef. There are difficulty settings, but once you get your head around the aspects like "where you SHOULD put your stores, how many people to hire, when to upgrade your headquarters", the rest can become rather easy. The main challenge is to be more efficient in your empire-building than your opponents. I can't comment too much on the campaign challenges, as I did mostly free plays as kid, and haven't racked up a huge amount of time now. As I remember, they give you very specific tasks to accomplish in limited time, which works better as challenge.
There are a lot of low scores based on the controls. However, I have to say, that the snail pace if your empire is running itself, the problematic placement of interior furniture, and the input lag of the mouse and keyboard, were all there in the original game. This is of course a detractor nonetheless, but since this is GOG, I wouldn't go to really low scores. Just be aware that the game is plagued by being from 2001. If that doesn't bother you, there is a lot of fun to be had, not the least due to the mob cliches being thrown around.
I can recommend this nice old strategy game. It reminds me old times of Win 95.
Who has a problems with performance you can try to use dgVoodoo2.

Its a Fantastic Game that i have played over and over for years
Title is Incorrect it was Never called Pizza Tycoon
Original Name was Pizza Connection
USA Version was Fast Food Tycoon 2
I own several discs of this game
And will be purchasing this digital GOG version soon

And my advice is try this
When i play this with my original discs
I play on an xp sp3 win 7 and win 8.1
And my advice may not work at all for the GOG version
But here it is
Before i even fire it up i go to Properties in XP
Then Setting/Advanced and find "Troubleshoot"
Hardware acceleration and i move it to the third bar from left
you dont want it on FULL i click apply and exit
For win 7 and 8
Right click desktop Click "Personalization"
Choose Display from the left panel of the window
Click "Change Display Settings" You want the "Troubleshoot"
Then Hardware Acceleration
This makes the game play for me just like it played on my xp in 2001
I dont know if this will help with the GOG version
