My own recommendation is to use anything with force feedback and disable auto-centering altogether. I also have this nifty trick for Saitek joys with centering spring, where I shorten it using cable ties nullifying any centering forces.
It take a bit to get used to it, but afterwards you will learn it it's super precise.
I learned it because my first PC joystick was a Logitech Wingman Force, which is still alive and kicking despite the fact I've been murdering the hell out of it with X-Wing/TIE and any flight sims that I found interesting.
