None of the problems were fixed
I will write down all the problems I have with this current GOG release, and there is a few. Problem 1 Unlike the PC versions of RE1 and RE2, RE3 always had a problem with wobbling character models. It looks terrible when the characters stand in a place, and you can see the models wobbling, and textures popping in and out of their body parts and clothes. This was always an issue with RE3 on PC and Dreamcast, and while the REbirth team fixed it in a mod many years ago, the GOG team decided to leave it as it is. Problem 2 In the retail PC version there were two more options in the in game settings under the Others menu, which were "Texture Correction" and some kind of Voodo setting. Texture correction when was disabled, it fixed the issue with sometimes the pre-rendered backgrounds having lines in them, as if they were sliced up, and I think the Voodo setting helped correcting the blood colors, which for some reason in RE3 are sometimes orange instead of red. You can fix the background issues, if you set the resolution in game, quit the game, and than when you play it next time you leave the resolution as it is without changing it in game. Problem 3 The in game settings in RE3 which you bring up with F1, has resolution options, and in the retail PC versions these were 4:3 resolution options. Sadly the GOG team didn't bothered to change these to widescreen resolutions, so even if you put the resolution to 1080p, 1440p. or 4K in the DirectX Configurations, it doesn't matter because the game will use the in game resolution setting which are 4:3 resolution options, and 1600x1200 is the maximum. Problem 4 Unlike the PC versions of RE1 and RE2, in RE3 once you start a new game or load game, you can't go back to the main menu like with F9 in RE1 and RE2. You have to quit the game with Esc and start up the game again. I hoped that the GOG team would put in an option so you can go back to the main menu without restarting the game, but they didn't.
