I think the only reason people include Thief games is because of its history and connection to Looking Glass and System Shock games.

Also because of the dark and immersive, and explorative atmosphere, and dark fantasy motifs. There are some rather nice levels with deep underground caves, and plenty of puzzles to solve. Even if it technically isn't an RPG but more of an adventure/stealth..

Sneaking in Ultima was sort of a joke.
Although sneaking in Arx Fatalis and Dark Messiah was certainly influenced by Thief.
am i the only one who was reminded of Wizardry and The Bard's Tale? (the latter not least for the 'Skara Brae' overlap...) speaking of which, where are they...

The old Bard's Tale games are still packaged with that hack 'n slash remake, so I assume they can't just be sold.

As for similar games, King's Field comes to mind as a simpler, though more difficult and, in my opinion, atmospheric game series. System Shock is the sci-fi equivalent, and I personally find it superior. Elder Scrolls has some similarities, but it's mostly just with perspective and some skills. Still great games, of course.

The versions bundled with the new game are Apple II versions running in a bundled emulator. I wouldn't expect GOG to ever add the DOS versions.

I'd rather call it sad ...

Ultima Underworld is one of my all time favorites. It was so unique when it came out.
I still think, a good remake could be a hit again, some decent graphics and not to many changes to the original, please. :-)

It is hard to believe nowadays that you needed top notch hardware at the time to play it.

Amiga version is better, imo...;) Amiga versions of Starflt 1&2 are also much better than the DOS versions, and Gog sells the DOS versions anyway. I find that WinUAE works well under 8.1x64--I wonder what licensing quirks prevent Gog from selling Amiga-emulated games...

Amiga and DOS conversions of the BT games have a few bug, while the original Apple II version apparantly are not.

Amiga emulators require a Workbench ROM to work, which is not free. I guess that is the reason, although it would have been nice if GOG sold Amiga Forever.

They'd have to do some SERIOUS bug fixes to get BT3 to work properly from the DOS version. Critical hits didn't even work.

Shadow Tower was probably my favorite from the genre on the PlayStation 1. King's Field 2 (KF3 in Japan) was also quite fun. The PS2 King's Field had some nice touches, but for some reason I didn't like it as much. There was another similar game called Eternal Ring that included some of the same spells and other features, but was a little faster paced.

Flynn
Try System Shock Portable. It's going to be the closest thing in terms of feel, despite the fact that it's a strict SciFi/Cyberpunk world rather than Fantasy. It's done by the same company with the same (enhanced) engine.

Have you played Daggerfall? It's the second Elder Scrolls game and so far, I like it. I just finished playing UW 1+2 and System Shock 1+2 so I was looking for similar games that I hadn't played yet. I passed Daggerfall back in the day but you can download it for free from Bethesda's website. I'm quite positively surprised.
Daggerfall does not count because dungeons are just randomly generated mass. Same goes to Oblivion, Skyrim and Morrowind even if dugeons are handmade.
Dungeons in those games are only mazes to run through to get to boss enemy and/or quest item.
