I notice that while the OG 1 & 2 games were originally sold, but now they they've been relegated to goodies for the remasters. Do these versions get the same updates as the ones that were originally sold and appear on your gameshelf?

I think that only GOG itself or maybe the publisher can answer your question.
That said, I highly doubt that the original games will ever get new updates: the only part that could be updated is ScummVM as the game engine recreation.

Yes, and especially when said remasters butcher the original graphics.
The originals haven't gotten an update since 2019, when GOG switched to a new ScummVM version (it was either that or the new installer structure, don't remember).

That's most likely the version, that made it into the Anniversary edition as bonus.

The 'classic' version of Little Big Adventure, was updated recently.
It really depends on the publisher.
