Does this game display properly on a wide screen?
Yes if you install the widescreen mod:
http://www.gog.com/en/news/mod_spotlight_planescape_torment_mods_guide/

But my advice, don't use resolution higher than 1440x900 (for 16:10) and 1366×768 (16:9). It will make the game look super-small.
A related question... I installed the mods in the GOG.com guide and played for a while. Now I'm thinking that the resolution I chose is too high (1680x1050) and would like to go with 1280x800. Can I just install the widescreen mod again, or will it break something? I also installed the second thing, which was something like support for save games up to 1680x1050. Will I also have to re-install the other mods in the guide?

Never mind. The same issue was asked and answered here already.

DON'T DO IT!

I know that thread says that it will work in theory, but it will not. Eventually you will be locked in a crashing loop somewhere down the road, I guarantee it. If you want to change the resolution, you basically have to start a new game.
Thank you for the warning! Luckily I'm not too far in the game yet and I was planning to start over to be safe, anyway.
