I want to play Pillars of Eternity Definitive Edition on Linux, so I cant use Galaxy to do the installation. Now I see this huge list of Linux installers to download - the main game, the patches, the DLCs...

This seems very confusing! What is the correct sequence for installing? Which patches do I need if I use the most recent installers? I would really like some help on this. Should be in the notes, I think.

You don't need to install the patches. The installer already includes the game in the newest version. Install the base game first. Then you can install the Pre-Order Bonus Item and Pet, Deadfire Pack and finally White March Part 1 and White March Part 2.
Patches are only needed if you had an older installer from before.
Thank you! So its
1. base game
2. Pre-Order Bonus Item and Pet
3. Deadfire Pack
4. White March Part 1
5. White March Part 2

... wow. I hope GOG releases Galaxy for Linux soon :-)

Yes. But items 2, 3 and 4&5 are optional and can be installed in any order.
