Is there anything I need to be aware of in the main story that could affect my character creation? Like I need to pick locks or find traps in order to get something important in the game?
Are you playing NWN or NWN2?
But generally no.
You can play the character you most like playing.
Henchmen or companions can take care of locks & traps, or you can just bash them.
For Neverwinter Nights 1, not really. The campaigns are designed to be pretty neutral. There are certainly areas that favor one class or another, and a couple exclusive quests (for instance, only wizards and sorcerers can create the golem companion in Act 2 of Hordes of the Underdark) but nothing major. You can always bring along a henchman if you want to shore up particular shortcomings.


For Neverwinter Nights 2, it depends on your campaign. For the original campaign, I'd watch your alignment more than anything. There just aren't very many conversation options for chaotic good or lawful evil characters. Generally speaking your conversation choices are between idealistic Neverwinter patriotism, jaded neutrality, or psychotic malevolence (ie, lawful good, true neutral, and chaotic evil). Not true everywhere, but enough that a lot of people reported having trouble keeping a steady alignment to qualify for classes like bard or barbarian.

For Mask of the Betrayer, there's a lack of melee NPC's. If you want a true melee tank, you'll need to play him yourself. It's not necessary, though; because the campaign begins at level 18 your spellcasters are pretty much already demigods. You also may need to solo the final boss; do keep that in mind when choosing your character.
NWN. 1.

I'm planning on going with a simple Dwarven fighter - Dwarven Defender. I found the prestige class first and worked backward on how to spec him right. Let's see how it goes.

For NWN2, I was thinking about recreating a Warrior Priest from Warhammer Fantasy. And since there is a Warpriest class in NWN2, I thought it was a perfect fit. Now if only I could get an actual two handed Warhammer.

Warpriest is a bad prestige class. He only gets spells every second level and the other bonusses are not so impressive.
In NWN1 SoU/HotU I play a paladin2, champion of torm2, cleric 20+ and she is very powerful.
In DnD3 clerics are very good fighters on their own since they have many buffs and use heavy equipment.

my idea of a good priest in NWN2 is paladin3, doomguide10, rest cleric. This one is very good in destroying undead and there are tons of undead in OC/MotB.

Or you simply use a cleric with some fighter levels. Remember that you need high wisdom and not more than 3 classes other than cleric or prestige classes with spell progression if you want to use level 9 spells in the OC.

Both sound just fine choices.

Do note that NWN1 OC is one campaign, SoU+HotU are another (and start from lvl1).
Also NWN2 OC+MotB is one campaign, SoZ another and MoW yet another.

While warpriest might not be the most powerful NWN2 prestige class in existence, it's just fine anyway.
I'd suggest starting with a pure cleric (war domain obviously?).
I'd also suggest just using a standard warhammer 2-handed. One or two points more or less damage mean nothing really.

Considering how much undead NWN2 has, a holy warrior with blunt weapon should have great time actually!

I was planning on making two characters for NWN1. One for the main story and another for the expansions. The Expansion character I was planning a human fighter/cleric/Champion of Torm. Figured that would be pretty good. Looks like I made the right choice.

In NWN2, I haven't really looked that much into it yet. I want to finish NWN 1 first. But that doomguide sounds interesting. I'm also not looking to min/max everything about the game. I just want to have fun.

I spent so much time in Baldur's Gate 1 & 2 just on character creation (using the singleplayer/mulitplayer trick where you can create and control all 6 slots) that I often never finished the story line. I would try a new character, make a new one, then make another one, and then get burned out before finishing anything.

The real blow against the Warpriest, in my eyes, is that the Cleric is already pretty good at combat, so there's not a whole lot left to improve on. Certainly not a whopping five caster levels worth.

Anyways, your class selection seems fine. You might want to try a wizard or sorcerer in one of your campaigns (Hordes of the Underdark in particular really lets a primary spellcaster rock out)
