How do i see "new releases" and sort by date released now? Why remove features? Before it was easy to see if any new nostalgia titles was added.. You could even sort by different release dates...
The sorting options have not changed with the redesign, with the minor exception of the "Popularity" sort order being renamed "bestselling", and the old "Bestselling" option becoming "bestselling (all time)".

I suspect you mean filtering. Yes, they did remove two or three filters (though honestly, the company filter was no loss, since it was so cumbersome to navigate), and simplified at least one more (one can no longer filter by games that run on a specific Windows OS, for example). They also removed list view, which irritated many.
The thing is, many -- if not most -- of the filters which were removed are still supported: if you know the right "flags" (probably not the right term) to add to the URL, they still work. The only ones I have seen posted about are the filters for release year period (which I'm pretty sure is what you're complaining about having been removed); they are laid out in this post.

Look at the link he posted. You can do it by adding the filter to the URL (until GOG ever removes it). There is no built in way to do it on the redesign.

So if you want pre2000 the URL would be: https://www.gog.com/games?page=1&sort=popularity&release=p2000

This whole thing seems to be a tad hard for you to understand, but GOG doesn't mean Good Old Games anymore. It did in the past, but GOG.Com has officially said it doesn't mean that anymore. It doesn't matter what it stood for in the past and it doesn't matter if you accept it or not, but the fact stands. Basically, from GOG.COM point of view, GOG doesn't stand for Good Old Games, it is just simply GOG.COM.

As for why don't they release as many old games anymore, that is a tad more difficult to answer. The main reason is, that they've already picked all the low hanging fruits of old games that might actually sell a copy or two. There are a lot of old titles that are in limbo as far the knowledge of proper rights holders goes or their rights have been divided between so many parties, that there's no deal there that would ensure any meaningful income for the rightsholders, in some cases, it would just mean expenses for them. Games like Blade Runner and No One Lives Forever are good examples of games like these.

In some cases, the companies which own the rights are just not willing to release under GOG, like Blizzard as an example, that doesn't want games like Diablo or Warcraft outside their own platform. Valve is another.

Some companies might be suspicious of DRM free model even with older games and aren't keen on publishing in a store that doesn't have any DRM.
