TARFU: My personal choices of cheese for a grilled cheese are extra sharp cheddar, baby swiss, and aged swiss. Usually just one of them, but sometimes 2 or (rarely) all three. Also, sometimes a slice of ham with one of the swiss cheeses.
Matewis: Gouda all the way!
You know, gouda cheese melts real nice and so it seems like an obvious choice, but in my experience the flavor of the gouda gets lost in the making of the sandwich somewhere. You need an robust cheese whose flavor won't get drowned out.
I like to have freshly sliced gouda with a fresh crisp apple from my fridge (anyone else keep apples in the fridge?) though. That can be the perfect snack sometimes.

If you like that, you should try the horseradish cheddar. Very tasty.
